The Quit Job menu option (Manager Menu >> Manager's Office >> Manager & GM Actions >> Quit Job) is only available in the Manager Menu when you are gainfully employed. Choose this option if you no longer want to work for your current team. You will be asked to confirm your choice.

Once you have resigned, you are now unemployed. See Leaving a Job for more information. You can also look into Getting Hired again.
